material used for evaporator and how much material is used for manufacturing one evaporator.

The most usual materials are copper tube and aluminum fins, but other combinations are possible (and may be necessary if the environment is corrosive.) Evaporators come in a wide range of sizes, so it is impossible to know how much material unless the required heat-exchange capacity is given.

Air cooling coils are not easy to design "from scratch." There are many variables and assumptions. From a factory standpoint, it makes more sense to manufacture some samples, test their actual performance, build a data base, and then make ratings from that. Such information tends to be proprietary.
