Smoke or small particle sensing

Its either an optical one used mostly in factories, using infra red beam and sensing break in beam by smoke particles

or ionising used in houses very sensitive. uses very small radioactive material to ionise the air, and sensing smoke which changes the resistance

Heat sensing

ie bi metal strip.

liquid in glass tube ( used in sprinklers )

then look at links provided by the others
