What voltage? How far? Conductors in air, separate or multi, in conduit, underground?

Consult local code.

You need to mention Primary and secondary Voltage. Once you know Primary voltage and Rating 75 KVA , you will be able to count Rated current of transformer. On the base of rated current you can count the size of Cable. Second thing you need to take in account the ambient temperature(Outdoor/Indoor).

Easy. Hire a competent Electrical Engineer to do it, who will use British Standard 7671 in this country.
