Ammonia has a strong and distinctive smell so one way would be to sniff around.

If something more scientific needed, and I remember my school chemistry right, ammonia gives white fumes of ammonium chloride with HCl vapour. Not sure about test details, but I'd have thought just opening a bottle of concentrated HCl (35%) in the vicinity would be enough.

If ammonia is present in quantities you can smell, the location of leaks can be determined by burning a "sulfur stick" nearby. The ammonia combines with the sulfur fumes to make a smoke that seems to emanate from the leak point.

Ammonia in water, such as might happen in a condenser with leaking tubes, can be detected with litmus paper.

There are several types of optic or electrochemical cell detectors for ammonia. Ammonia absorbs ultraviolet light, which can be detected by a UV emitter and photocell collector (older Honeywell detectors). Electronic cell detectors include Manning and Dräger, to name two, and others. (I have no commercial interest with any of these.) They detect ammonia in ranges around 0-250 ppm.

In higher ranges, there are sampling tubes in which air is drawn through a tube that containd some sort of powder/granules/crystals that change color. MSA (Mine Safety Appliances) and Dräger, among others, make these.

I know it as "safe operating procedure" alternatively known as SWP or "safe working procedure"
