Decoding Catalytic Reactions

i have read & studied several Catalytic Chemical Reactions ...like use of Ni in Hydrogenation of oils in Vanaspati (Dalda) Production
But ,i have not come across explanations as to how the catalyst actually influences the reactions
Where can i read about it ?
