I'm having a hard time figuring out what a "bouncy" level transmitter is. And where does a level transmitter (assuming ultrasonic or the like) deal with pressure? I'm confused, but thats easy to do.

Read the operators manual. You DO have the manual, right?

The OP's device is probably a displacer style level transmitter based on buoyancy, not bouncy.

For a tutorial on the principle of buoyancy, see pages 43-44 (54-55 pdf) and for how buoyancy level detectors operate see pages 467-473 (478-484 pdf) in Tony Kuphaldt's Lessons in Industrial Instrumentation

To the extent that ultrasonic or radar level sensors reflect (bounce) a signal off the material's surface, could they also be called "bouncy type"?
