Exactly the same as everywhere else. It is there to operate the circuit protective device(s) in the event of a fault.

I think airplane electrical systems are "grounded" to the airframe, but am not sure.

In ships, I have seen ungrounded systems, in order to avoid electrolysis from currents in the hull. If part of the electrical system inadvertently does become "grounded" to the hull, this can be detected with ground fault lights. By deenergizing various circuits, the location of the fault can be tracked down.
