what is the required temperature of baking oven for motor winding insulation?

That could vary with the manufacture of the product used for insulation. Would seek that information from the supplier.

Varnish backing temp is normally specified on its data sheet or you can ask supplier for it, But also make sure that insulation used between stack & winding, and wire enamel is also capable of handle that temp.
