Solar Dryers

Hi,

Advise us on how to make efficient,affordable, and high quality solar dryers, for mangoes.The dryer should be hardy and be able to cater for commercial needs hence giving quality end products.Aso advise on how to get dried mangoes that has the original sharp color without complomising the stadard health quality requirements.

Remove moisture from air by lowering the temperatures, right after -bring dry air to solar heat exchanger then make the air blow or made contact your raw product...wallah..get somebody to figure it out the adjustments for you -a mechanical engineer.

add refined powederized sugar before drying..oppss...just try it.

I read that all vegan food should be soaked in the urine of an old billy goat prior to drying - supposed to make it more tasty.

As an omnivore with many severe food allergies I feel that I should point out a fallacy here. Healthy food for one individual need not be healthy food for another individual. Similarly unhealthy food for one individual need not be unhealthy for another individual.

So unless you plan on starting some eugenic master plan, cut the vegan some slack.

the organic thing has been co-opted by all the usual industrial players, it gets hard to separate the the fact from the hype

better results are going to be obtained using electric or natural gas fired dryers,

it's going to be tough to have real control with solar dryers & do any serious production, chances are this is an exercise in marketing 1st & formost

as you noted humans are omnivores...

I should probably have added that it is generally easier to have a working process, before using a much less versatile source of dry hot air like solar

You need to do your homework first (with all due respect). Do Internet research to see if someone has written an agricultural thesis for the production of dried mangoes. You need to find out what the optimal temperature is to keep the product flavors intact. Also, you want to decide what your final percentage of moisture is going to be in your final product. In Hawaii we have a wide variety of Chinese perserved fruits "our term - crack-seed". My wife an I haven't bought dried mangoes for quite awhile because the moisture content is too dry. But don't base you decision on us, rather do you own market research in the areas where you decide to sell your product to see what their preferences are as to sweetness and moisture content. Most are preserved with some type of sweetener, be it sugar, aspartame, or whatever. Once you homework is finalized, you now have the requirements to ask someone to meet when making your drier.

Some considerations to the solar dryer: It is similar to the problems with an oven - in the sense that you need enough surface area to process the whole batchload, and you need a design which will allow for only a very small variation in temperature among the racks, throughout all corners of the unit. Perhaps, (and I don't know this for a fact, but you may want to experiment) the loss in color is due to bleaching of the product due to ultra violet rays from the light source, as in the case of the sundried, outside exposure, or from the incandescent light source, when making test batches. A possible way to test this is to use a steel box heated by incandescent lamps which has louvered vents, or slits which allow the hot moisture laden air to escape without much of any UV light let in. You could try the concept on a small batch for testing purposes. Dry it to your requirements for product suppleness, and controlled quality of your standard of sweetness. I suspect that some batches may need variations in sweetening, or flavoring to put out a consistant-tasting product, but, as Kipling used to write - "That's another story".
