What Is Shrinkage Coefficient?

I need the relation between shrinkage coefficient and drying rate.
Any help is deeply appreciated.

I mean how you can define a shrinkage coefficient of any substance, lets say tomato(vegetables).

Well, if you start with a tomato that weighs 400 grams, dry it out through some mystical technique until it now weighs 120 grams, what would be the shrinkage rate? Volume dry/volume wet must be figured to accomplish this.

Now, use the same application on another substance... cheap blue jeans. Soaking wet jeans weighing 12 kg, dried thoroughly now weigh 1.8 kg. Has the volume of the pants decreased at the same rate as the tomato? Why not?

Now, use the same application on another substance... water. Shrinkage rate the same? What gives?

What does the drying rate have to do with any of this?

I am at nineteen questions.
