What is the formula for sizing an underground grease interceptor for a small restaurant/bar with 27 DFU total, and 22 DFU diversified?

How do you arrive at a 1000-gallon unit vs. a 635-gallon unit?

How do you factor in how many days/week the restaurant/bar is operated?
