Is it allowed to run fire hydrant pipes above cable trays in floors with a walkable false ceiling?

It depends on the local fire code regulations where the building is located.

I suggest you contact the local fire inspector's office and obtain a copy of their fire code restrictions.

Allowed is something that would best to address with local codes. If in fact one of the pipes leak it would usually set off a fire alarm.

Isn't that called a floor? From this brief description it sounds like it would interfere with automated fire suppression response.

Sure. Just be sure to install drains in the cable trays so they don't full up with water.

What is a "walkable false ceiling"?

Having done a lot of piping design work, being very proficient with the wrenches and other piping tools and being a volunteer firefighter: Most definitely NO!

The ordinary hydrant has a 4-1/2" fitting and 2 ea 2-1/2" fittings. This is fed by at least a 4" steel pipe, more often 6". The weight of a 4" pipe filled with water is 16.3 #/ft. For 6" it is 31.5 #/ft. This is too much weight to put over a cable tray. The number of hangers that would be required would leave little access to the trays. Also any money saved by routing them above the trays would be lost. It most likely would cost much more to repair than the original piping. No matter what the local codes say, the potential losses are too great to "run fire hydrant pipes above cable trays".

This also holds true to many other piping configurations that could be placed above cable trays.

Thanks OS, you described what the OP meant quite nicely. I was struggling with exactly what it was he was asking advice on...

But yeah, access and serviceability make the idea of running these pipes (any pipes) over a cableway undesirable.

Walkable false ceiling is another one....sounds great....most ceilings I encounter after the fact are anything but walkable....no service access consideration at all....and then if you're lucky enough to be onsite during the build and ask for a service gantry/crawl way in the ceiling void the architect doesn't get it.
