A good project is when your institution can test your ability to apply the knowledge they crammed into your head. And to test your ability to investigate and use more than you were taught.
New Ideas are scarce and you may have to improve on existing projects.
The Best project would be something you have a deep interest in.
Not too easy, not too hard but just right.

Think about a project that you will have " a deep interest in" as Hendrik said! A deep interest that could keep you "burning candles at night" old people say!
OTOH, if you just wanted to pass your subject, KISS it. Stupidly simple that your professor can't make a headway in any of the sub-topics you bring forward.
BTW, you look around and see what your locality needs. Perhaps your community can make use of your intended project topic. Instead of looking up at the ceiling of your room for answers, you might as well look around for a subject. Avoids stiff neck.
