First you need to tell us where you are. Machines are fairly accessible.

Do you want to process the maize into bio-fuel or food?

Vegetables can be preserved in many ways - Drying, cooling, freezing, canning.

The best method will also depend on the infrastructure available to you.

As Hendrik noted, your location is an important factor - I could recommend the John Deere dealership down the road from me, but that wouldn't do you much good if you're in Kuala Lumpur. Also, what kind of vegetables do you want to preserve? Tomatoes, eggplants, and cucumbers have different needs from maize, after all. And from each other.

Again, where you are in the world determines what is going to be available to you. Britain, Canada and USA are all good sources of new and used harvesting equipment. Russia is also a possibility for new equipment but I would not buy used machine from there.

As for the preservation of vegetables in the US we use refrigerated storage in a nitrogen atmosphere. Most fruits are picked before full ripeness and then artificially ripened with the introduction of ethylene gas just before sale.

I hope this helps you out.

Regards, Mike
