I have a hard enough time getting take out pizza right.

Maybe you should order some pizza and make an attempt to do your own homework.

A 90 deg 1" "straight" pipe with outlets ??

A T piece must be placed opposite the point where you need the fluid.

To achieve that you need to add the length of the screw or insert that will disappear in the t to your pipe length leading to the cutoff.

If you want to determine the volume of water that will be diverted into the branch you need to give more detail. Pipe lengths, elevations, flows, discharges. pressures, material and class etc.
