Change in Water Volume

How to calculate change in volume of 1kg of water initially at atmoshpheric pressure @ 27 deg. cel. to exposed under vaccum at 1 Torr & 60 deg. cel.

Download software that will give you the density (specific volume), even if it is only a trial version:

It will be steam. Please refer to Steam Tables for more information. Try Perry, "The Chemical Engineer's Handbook", any edition, or Mayhew & Rogers, "Thermodynamic properties of fluids".
