For the 'Correct' definition you must check a dictionary...
The correct, laymans and engineers* definitions are all doubtless different.
You can also start adding extra words like design, production, mechanical electronics...or even bastardisations like 'social' etc.

Someone who drives a train or keeps a ship's systems safe and running.

They used to ride in airplanes, too, but they're extinct now.

That depends upon location. In the UK, the term "driver" is used, be it on an electric unit, diesel, steam or whatever. The term "engineer" in that context is a term generally originating in the North American continent and can be celebrated as another abstruse example of nations divided by a common language (pavement/sidewalk, boot/trunk, windscreen/windshield, etc., etc.).

There are two types of engineers; one has a degree; the other does not. The first engineer uses engineering principals learned in college and applies them to designs. The second type of engineer, although not degreed, has a certificate that says he is qualified to operate a machine such as a railroad locomotive or a steam generating plant. Like everything else, more emphasis is put on requiring more education for tasks that didn't require a degree before. This is probably because machines have become more complex. The engineer of an airliner is a different story. He was replaced by computers and sensors.

Another description of an engineer is: one type wears a hard hat; the other doesn't.
