oxy acetalene flame cuts carbon steel by burning iron to iron oxide. In SS, the chrome & nickle content does not allow it to burn to iron oxide, hence cannot be used.

Stainless Steels cannot be cut by oxy-acetylene flame due to the formation of Chromium oxide layer on the heated surface which requires higher temperatures to melt than the gas cutting set can produce. One has to use cold cutting methods such as power hacksaw or Plasma cutting set which generates much higher temperatures to melt S.S. Some people use welding electrodes with high current to cut through S.S. for rough work.

Well poor SS end surface finish and discolouration for one.

also, Stainless steel is sensitive to temperatures in the region between about 800 and 1200 degrees F. In this region carbon comes out of solution and combines with the Chromium to form Chromium Carbides this both reduces the material's corrosion resistance as well as makes it prone to cracking.
