Flange Face Chamber

Apply into the flange face chamber a wooden dummy in order to protect the flange face; one can also leave the original gasket in place.

What is "flange face chamber" here?

Just a guess, but this may be nothing more than a mix-up in translation

In Pipe Fabrication, before the "Spools" are shipped all flange faces were fitted with a plastic or wood "Flange Cover" to protect the gasket face from damage.

I would guess similarly. If you took a valve or spool out of a pipeline, it would be a good idea to protect the exposed flange faces of the remaining pipe. I suspect the word "chamber" is a weak choice. "Space" sounds better.
