In the refrigeration plant where I work, we have power cables going to the large loads such as compressors and heaters (3-phase, 480 or 208 VAC). There are many solenoid valves, which are small loads of about 0.6 A (single phase 120 VAC); the wiring to them would be considered control wiring. It is just like power wiring, only smaller. Various meters that we have are connected to transducers (sensors) by signal cable, which carries low voltage and current, and may be twisted-pair, shielded, or coaxial, depending the type of signal. The signal wiring is segregated from the other types (in separate conduits if actually enclosed in conduits).
