Jam Production Technology

Hi,
We are a food manufacturing firm and interested in venturing to Jam production.
Can anyone suggest /explain the process and machinery involved in production of Jam?

Well, it happens that I may be able to help a little.

A link to a paper outlining the entire process here. This is pretty complete... obviously a generalized outline, but most areas of concern are at least covered.

An internet search shows a number of auctions for entire jam/jelly/juice plants... while you may be able to get some deals on machinery, all of these auctions may not bode well for such a venture right now.

It gives an Idea about the whole thing
Still I need to know more about the Cooking Vats...
Is it an Evaporator?

Or Open Vat?

How the Thick jam is tranferred to the filling lines?
If the piping is steam jacketed?
If yes How?
How the lines are cleaned?
How about product retreival?

Hello Vipin.

The questions you pose are mission specific, and are better answered by a trusted consultant... one covered by insurance, one to whom all details of operation are known, one familiar with the economy and labor pool available at the plant site, a consultant familiar with the regulations for packaged foods in the country of origin as well as export regulations, and on and on and on.

Being in the food packaging business, have you such a consultant already?

Discussion regarding open vat versus evaporator is on page two of the linked document. This is a decision, based on many variables unknown to me. Your remaining questions are simply the processes of manufacturing. Your consultant will be able to suggest the proper techniques.
