Is the tank baffled?

What units are the viscosity?

What is the geometry of the agitator blade?

Does the arrangement correlate with the examples given in Perry, "The Chemical Engineer's Handbook"?

The agitator motor will be the vertical cylindrical shaped object directly above the tank, with a shaft from the bottom that enters the tank, and some wires going into the top or side. Good luck!

Whether or not the tank is baffled, I am baffled by the lack of useful information and the surplus of non-useful information thus far....

We could guess, but you haven't provided enough information (such as detail regarding the critical mixing blade dimensions and shape). The motor would need to be food grade stainless steel (probably).

Perhaps you should talk with a local company who builds or supplies mixing systems for the correct solution to meet your application needs.
