quite true... but one must also have a circuit connected across the crystal, that can take advantage of the displaced electrons.

You can go into most electronic supply stores and purchase quartz crystals used for timing devices such as watches, etc. They are designed to resonate at a fixed frequency. If, instead of driving them at their resonant frequency with an electric circuit, you vibrate them at their resonant frequency, they will generate AC voltage at that frequency. It's called piezoelectricity and works with quartz and a number of other crystals and some non-crystalline materials.

Quartz is piezoelectric, meaning that it develops a charge when mechanically stressed. However, the current available is very small, so there is very little power.
