In the same way as any other: PencilAndPaper 1.0 is good enough.

There's a lovely piece of software called RingBinder 1.0. Sits on a bookshelf. Needs no USB connection and will run anywhere without connecting to the mains. Highly recommended.

Some PAT testers record the values allowing you to download them to a computer or even print them out in a report directly from a printer built in to the PAT tester (check the manual for more details).
It really doesn't sound like you are qualified to operate a PAT tester at all (refer to local electrical testing standards and codes for more details including who is allowed to operate a PAT tester).
Are you aware that you and your manager or supervisor are legally responsible if someone checks or if something goes wrong and you are not qualified to perform said testing work? Fines, jail time, etc, etc.
