I am assuming this is sort of like how an expert mathematician can find a formula that predicts exactly how a game of black jack with any number of decks was played out after it was played but never before.

Here is another point, very much germane, since probability simulations are run using various forms of gambling, all the time, and cryptography uses randomness, probabilities, and statistics to test its theories regularly.

As a cryptographer, I was always made aware that as long as the enemy could not get his/her hands on both a smattering of plain-text (unencrypted) and encrypted data from the same crypto source, it was very nearly impossible to crack a machine-encryption scheme. As it stands now, this still holds true. But IF you have a smidgen of each, known to have used the same scheme, it becomes exponentially simpler to do. All it takes is reverse-engineering, but that, in turn, requires the code that was built by the system in the first place, for comparison.

Much like figuring out mathematically (and encryption is HEAVY with advance math) how a roulette wheel was beaten by seeing it done.
