As the valve is on/off, and full bore, there is absolutely no reason to specify Cv.

All valves have a Cv and if purchasing/specificing a valve, state the Cv.

Otherwise, how does one know if it will work?

A slurry will have a different flow rate (Cv) than water.

Be a smart engineer and specify the Cv.

All valves have a rated Cv but for on off purposes, you only need to know the general Cv for the line size valve you will be choosing.

But be careful that the valve is sized for the correct maximum flow, in other words make sure the maximum flow of the valve can handle your design throughput.
