There are many different types of oats: rolled, steel-cut, and
stone-ground. So it's hard to choose just one to supplement your breakfast.
Since January is National Oatmeal Month, I decided to present some information
about the different types of oats.
Definitions
Rolled oats are made by steaming the hulled toasted grains
and then running them between rollers to create flakes. Steel-cut oats are
about the size of a sesame seed and are hulled, toasted, oat grains that are
then coarsely chopped. Stone-ground oats are about the size of a poppy seed and
are formed much the same way as steel-cut oats; however, stone-ground oats are ground into smaller
pieces.
Nutrition
All of these oats (rolled, steel-cut, stone-ground) contain
the germ, endosperm, and bran of the original grain. Because of this, they are
considered whole grains. Their divergence in nutritional value is due to their
unique processing methods. Rolled oats start off as the least healthy type because
of nutrient loss due to heat and moisture during steaming , but the long
cooking time that steel-cut oats need also results in lost nutrients. All three
forms of these oats are considered to be low-glycemic foods.
Since the nutritional difference between old-fashioned
rolled oats, steel-cut oats, and stone-ground oats is relatively miniscule, the
type that appeals to your taste buds most is recommended. So now you might be thinking,
"What about them quick-cooking and
instant oats?" Sorry, but oats that
are packaged with additives are nutritionally inferior.
